Hi, I have an old Asus K010e that is still stuck in 2011 in terms of software / firmware, few apps and specially youtube won’t work on it, it is on android 5.0, it does need rooting also needs custom recovery and custom rom, I also need instructions of how to do the job, thank you for your help.

Check for updates on Asus' website. A quick search shows Asus made an update available to Android 7 for this device, which will make it more useful to you. Other than that, you're going to have an issue in that virtually everyone has moved on from that device due to its age. Custom ROMs are no longer supported and are likely to be non-existent today, with tons of broken links.
The simple reality here is that even if you do manage to get the device updated, it at best is running a dual core processor, and a very old one at that. You would be better served purchasing a new tablet.
